the kinds you want is known as BBQ steamboat if i'm not wrong, Marina South has lots of these kind of steamboat.

for the normal kind of steamboat (usually with 1 or 2 soup bases), you may like to try Bugis, there are lots of steamboat restaurants recently, my personal favourite there is CHUAN YI PIN (directly opposite Break Talk).
they're operated by people from China and food is rather fresh with lots of variety.
i like their sliced pork and beef especially, very tender and thinly sliced.

another one which i recently discovered is at Chinatown, it's called Chong Qing and it's located opposite CK.
this has great mala soup base!!

M hotel has buffet steamboat...indoors with aircon (duh) but dont know where its located...quite ex..can go do a search at google

Erm, i think marina south has the best BBQ steamboat. You can check out Liang seah street too. There's quite a few over there too.
