(fits a 30cm by 30cm round tray) Ingredients- 24 oreo cookies, cream removed, crushed.
- 4 blocks of 8oz philaedelphia cream cheese (in silver box).
- 2 cups of fine caster sugar.
- Melted unsalted butter (put the butter in a bowl over a tray of boiling water to melt, takes about 15 minutes)
- 2 teaspoons of vanilla essence
- 4 eggs
- Chopped oreo cookies (for mixing into cheese in the last stage)
- 2 pieces of melted dark baking chocolate (melt the chocolate by putting it in a bowl over a tray of boiling water, be careful not to let any water get into the chocolate. This will take a while, about 15 minutes so its best to melt the chocolate first)
Method- Preheat oven at approximately 170C 10 minutes prior to baking.
- Mix the powdered oreo with some melted butter. don't mix too much butter in or it will be too oily. the crumbs should be just coated and not too wet. pour the cookie crumbs into a baking tin and press it evenly to form a nice base, about 0.5cm thick. Press and compress.
- Bake the oreo crust for 10 minutes. remove from oven and cool. keep the oven on.
- Put the cream cheese, sugar, vanilla essence into the mixing bowl and beat till fluffy and creamy (better to use an electric cake mixer rather than by hand whisk) about 10 minutes by electric mixer.
- If making chocolate oreo cake, then add in the melted chocolate and mix evenly.
- Beat in the 4 eggs into cheese mix. don't over mix. once they are mixed into cheese mixture thoroughly u should stop mixing.
- Finally, mix in 1/2 or 1 cup of chopped oreo cookies into the mixture and pour the batter into the cooled oreo cookie crust.
- In order to prevent the cake from becoming too dry and cracking too much you should put the baking tin over a bigger tin filled with boiling water in the oven. this will prevent the cake from becoming too dry and allow a gentler cooking, if you do not have a bigger tin to contain the water, you can still bake it on its own, except the cake would turn out "harder".
- Bake for 35 minutes in oven. turn off the oven and leave cheesecake in oven for at least 1/2 and hour more. do not open the oven door when u turn it off, let it continue to cook in the warm oven.
- Cool and refrigerate for at least 4 hours before serving. the cake should have shrunk from its side and be easily removed from the cake tin when u turn it over. Just tap the inverted base and the cake should come out easily. If you have those tins which has sides that open up it might make your life a little easier.
TIP: use a sharp knife dipped in hot water to cut the cake so that the slices would be neatly cut. |

isn't put less thenx the smell wun so much of cheese.. ?
i like oreo ..
but dun like cheese.. |
