Ing:
115g/4 oz butter,soften plus extra for greasing
55g/2 oz golden caster sugar,plus extra for dusting
1tsp chopped lavender leaves finely grated rind of 1 lemon
175g/6 oz plain flour
method:
1:preheat the oven 150c/300f/Gas mark2, then grease a large baking sheet.place the caster sugar n lavender leaves in a food processor. process until the lavender leaves is very finely chopped then add butter and lemon rind n process until light n fluffy. tranfer to large bowl sift in the flour and beat until mixture form n stiff dough.
2:place the dough on a sheet of baking paper n place another sheet on top. gently press down with a rolling pin n roll out to 3-5mm inch thick. remove the top sheet paper n stamp out circle from the dough using 7cm round biscuit cutter. re-knead and re roll the dough trimming and stamp out more biscuits.
3: using a palette knife. carefully transfer the biscuit to the prepared baking sheet. prick the biscuit with a fork n bake in the preheat oven for 12 min or until pale brown. leave to cool on the baking sheet for 2min den transfer to a wire rack to cool completely
