I went to HK a few years ago in December and they had a conference too so most hotels were fully booked or the rooms were really really expensive.
So I searched for hostels instead and ended up staying at http://www.dragonhostel.com/
It's really convenient since its just opposite 女人街 (Ladies Street) and the owners are really really nice and friendly.

Walking distance to the MTR and pasar malam shopping area.  Rooms are small but if you are the type who just go back, shower, plonk and sleep, its more than enough. Hehe.
