This might not be what you are looking for but I thought I should just share.
I went to HK a few years ago in December and they had a conference too so most hotels were fully booked or the rooms were really really expensive.
So I searched for hostels instead and ended up staying at

It's really convenient since its just opposite 女人街 (Ladies Street) and the owners are really really nice and friendly.
But don't expect anything classy since it's just a hostel.
